Many are aware of the importance of excellent olive oil to our kitchen, but not many know that its production process leaves 80% of the fruit, a waste called olive pomace. Some 2,000 tons of olive pomace are produced each year in Israel alone, and 2,000,000 in the entire Mediterranean basin. Olive pomace is considered polluting waste, and after the oil extraction process is completed, olive mills have trouble disposing of it. Adrābā gives value to the material, time and place in the oil mill from the view of circular economy, using craft techniques as poetic means that incorporate the story of the local place and skills.
